Elliot Schiffer

Elliot Schiffer

CEO

Elliot Schiffer has been the CEO of Mici since 2017 when he was named one of Nation’s Restaurant News’ “New Top Executives”. He has overseen major initiatives to prepare Mici for sustainable growth – including the revamp of Mici’s online ordering site and Point of Sale system, the consolidation of Mici’s supply chain into a single food distributor, and the pairing down of the brand’s menu offerings. Prior to Mici, Elliot built a $75M business inside airports and casinos as the SVP of Development at Smashburger – named Most Promising Company In America by Forbes Magazine during Elliot’s work there. Originally a management consultant at Deloitte, Elliot joined the restaurant business to learn management at Lettuce Entertain You Enterprises in Chicago. At “Lettuce”, Elliot advanced from Assistant Manager to Director of Operations and was able to help build a new concept, MBurger, with founder Richard Melman. Elliot received a B.S. in Economics from Washington University in St. Louis. He earned his MBA from Northwestern’s Kellogg School of Management and was named an F.C. Austin Scholar while studying Entrepreneurship, Finance, and Marketing. Elliot lives in Denver with his wife Sara, son Walt, and daughter Susanna. He spends his free time skiing or hiking with his family.

Jeff Miceli

Jeff Miceli

President | Founder

Jeff is the Founder and President of Mici Handcrafted Italian. His passion for pizza and work in the restaurant industry started at the young age of thirteen. Out of college with his economics degree from the University of Florida, along with his entrepreneurial spirit, he opened his first independent carry-out and pizza delivery business with his brother, Michael. Seven years later and ready for a new challenge, Jeff thought he could fill a niche by combining his pizza delivery expertise with family recipes in a fast-casual Italian concept. After getting his family’s buy-in, Mici was born. The concept quickly became an award-winning Denver favorite with a culture that retained both employees and repeat guests. The extremely high sales per square foot allowed Jeff and his family to expand to four locations in the Denver area. But, Jeff wasn’t done yet. He always had a vision to simplify the pizza making process to improve consistency and reduce operational complexity. With years of experimentation and future growth in mind, he developed an exclusive pizza press which revolutionized the artisan pizza making process. With a US Patent in hand and less than an hour of training, now anyone at Mici can make an authentic, artisan “award-winning” pie! Jeff enjoys everything Colorado has to offer with his wife Marissa and two sons, Rocco and Leo (who take pride in the business and are Denver’s leading pizza connoisseurs)!

Joe Melton

Joe Melton

SVP of Operations

Joe joined Mici in 2018 to oversee all aspects of Mici’s operation. He leads both corporate and franchise operations teams, oversees training, and manages Mici’s R&M program. Joe comes to Mici after a highly successful 24-year career at Outback Steakhouse. Joe started as a server in 1993 and held progressive roles of increasing responsibility including Service Tech, Food Tech, and Managing Partner. Joe was given the prestigious Managing Partner of the Year award four times and then achieved the #1 restaurant on the balanced scorecard out of 672 locations in the Outback system for two consecutive years. In Joe’s first stint as Joint Venture Partner, he spent two years turning around the Michigan/Ohio market from 45th in the company’s metrics to 5th. Joe spent much of his time at Outback Steakhouse working with key franchise partners and has a passion for providing support in the areas of restaurant growth, development, and marketing to generate top line growth and improve store margins. Joe lives in Castle Rock, CO. He spends winters skiing and summers perfecting his smoked brisket for backyard bbqs with wife Christine and children Sam, Tori, Mia and Mason.

Kim Miceli

Kim Miceli

Vice President of Brand Management | Co-Founder

Kim Miceli co-founded Mici with her two brothers and is currently the VP of Brand Management. Kim oversees all aspects of the company’s marketing initiatives and manages Mici’s portfolio of brand assets. Kim’s passion for the Italian culture, coupled with a deep appreciation for good design and attention to detail inspired a multi-sensory approach as she developed Mici’s brand identity, which evokes emotion and the senses for a unique experience. In Kim’s previous life, she was an educator and one of two teachers in her school district selected for a full scholarship to the UCF Math and Science Scholars Program where she received her Masters degree. She went on to pilot the country’s first school that was dedicated to serving children of the homeless and later moved to Denver to become the Homeless Liaison for the Denver Public School District. She continues to feed her passion for serving this population of children by volunteering with her twin teenage daughters, Francesca and Sofia.

Michael Miceli

Vice President of Operations | Co-Founder

Michael Miceli is co-founder of Mici Handcrafted Italian and currently the VP of Operations. Michael has been in the restaurant industry his entire career which started while he was still in college earning his Business Degree in Hospitality Management at the University of Central Florida. At that time, he opened an independent carry-out and pizza delivery business with his brother, Jeff. While competing against similar pizza concepts in town, Michael learned about running lean while maintaining high food quality and service standards. At Mici, Michael has been an Opening General Manager for several restaurants, leading to the successful launch of the brand in these markets. Michael serves as the company’s expert on food quality and technique, which has always been his passion. He is responsible for testing, piloting, and perfecting new operational systems – recently overseeing the installation and operation of Mici’s first conveyor belt brick oven. During his free time, he enjoys the great outdoors and always finds adventure with his wife Monica and their three children, Mia, Isabella and Franco.

Marissa Miceli

Marissa Miceli

Director of Catering and Local Store Marketing

Marissa currently works as Mici’s Director of Catering and Local Store Marketing, working to build a community around each Mici location. Marissa has served in a variety of roles for the company in the areas of Operations, Marketing, Catering, and Training. She is widely known for her enthusiasm, love for hospitality and networking expertise. Marissa began her career in the restaurant industry in St. Louis at the young age of thirteen, gaining valuable experience working in her parents’ Italian restaurants for almost two decades. As a second-generation Italian, Marissa understands the importance of storytelling, maintaining the company’s roots and has an infinite love for connecting with guests. Marissa’s passion for people can be traced back to her career as a non-profit executive where she spent significant time working on behalf of a mission in fundraising, event management and community relations. Marissa and her husband, Jeff love raising their two boys in beautiful Colorado. You can find them both enjoying the outdoors with family in their spare time.

Krista Gibson

Krista Gibson

Board Advisor

Krista Gibson has been a member of Mici’s Board of Advisors since 2017 – guiding the company through its digital transformation and push into digital marketing. Krista is a C-level Executive with over 25-years of experience in the hospitality industry. Krista is the former CMO for Chili’s Grill & Bar, a global company with +1600 locations in 31 countries where she led all aspects of brand building, innovation and sales growth strategies. She reported to the CEO and was a member of Brinker International’s (EAT) senior leadership team charged with delivering EPS growth for a $3.25B Fortune 750 restaurant portfolio company (Chili’s Bar & Grill and Maggiano’s Little Italy). Krista led building Chili’s transformative, best-in-class digital customer experience as the first national brand to implement tabletop devices, building a robust loyalty program, and leveraging big data to provide actionable insights for menu innovation and operations execution. Krista is currently the CMO for the Women’s Foodservice Forum (WFF), a non-profit focused on accelerating the advancement of women leaders in the Food Industry. Krista has both a Bachelor of Science and MBA from the University of Florida. Krista lives in Dallas, TX and is currently training for her first half marathon.

Dave Doty

David Doty

Board Advisor

David Doty has been a Board Advisor to Mici since 2017 – using his 25 years of experience as an executive and franchise owner to guide Mici’s growth and preparation for franchising. After an early career as a consumer brand manager, David became the CEO of Jerry’s Restaurants in 1995. He established a master licensing agreement with Black Bear Diner and worked as Chief Marketing Officer and then Chief Strategy Officer to help build the fastest growing family dining brand in the US – with 145 locations in 15 states. David was also one of the first franchisees of Smashburger, building the most successful franchise in the country by opening 14 stores in four years and winning Franchisee of The Year in each of his four years of operation. After generating best in class Average Unit Volumes per store, David sold the franchise back to Smashburger Corporate in 2014. David’s focus has always remained centered on the people – building dynamic and resilient teams that are vital to success. David holds a Bachelor of Science degree in Accounting from the University of Colorado and an MBA in Marketing and Strategic Management from the Carlson School at the University of Minnesota. David spends his spare time skiing in Winter Park, CO and travelling back to his birth state of Hawaii.
